Eating Paleo is NOT Boring

My lunch was a Bell Pepper Chicken Fajita with Guacamole, so good!

A lot of times when people find out I am on the paleo diet and what all I can’t eat they freak out and tell me how boring it must be to follow paleo. The longer I am on paleo the more delicious recipes I learn and the more I enjoy eating so healthy. I think I am getting to the point where I now enjoy eating clean more than my old junk food eating habits. Yesterday was a great example of an interesting and delicious day in the life of paleo eating. I received a request a few weeks ago asking for more examples of what it is like to eat paleo, so here it is.

Breakfast:

  • 3 eggs
  • Brussels Sprouts and Snow Peas cooked in coconut oil
  • Tomatoes
  • Small Quantity of Pumpkin Seeds
  • Fish oil pills for omega 3

Lunch:

  • Bell Pepper Chicken Fajita with guacamole
  • Bok Choy cooked in coconut oil
  • Small Quantity of Cashews

Dinner:

  • Paleo Salmon
  • Broccoli
  • Brussels Sprouts cooked in coconut oil
  • Tomatoes
  • Macadamia Nuts
  • Seltzer Water with Lime Juice

I really enjoyed the food I ate yesterday and it is one of my healthiest days ever. My friend who was over for lunch said that my face lit up and I looked so happy while I was eating the bell pepper fajita (recipe coming soon). I am not surprised because I was so happy eating it I can’t think of any non-paleo food I would rather eat.

I did eat more nuts than normal which can be bad due to increased omega 6 intake but I balanced it out by taking fish oil pills and eating wild caught salmon for dinner. It also helps that I ate macadamia nuts which are low in omega 6 for a nut.

The seltzer water and lime juice is a non-alcoholic version of a NorCal Margarita I made for myself because I was craving a drink that is more than just water. Yesterday was the third day of No Alcohol November and it was kind of tough on me. The virgin NorCal Margarita is actually pretty good. I have a feeling I will be drinking a lot of them for the next two and half weeks.

You may have noticed that today I was heavy on the vegetables and I had no fruits at all. This is because I am trying to get into ketosis and I need to cut my carb intake to do so. The great thing about ketosis is that it helps you lose weight very quickly. More to come on ketosis soon.

    How do you like the coconut oil?

    • I’m not sure if you are being sarcastic given that I use it to cook almost everything but in case you were serious I like it a lot. It doesn’t have any coconut flavor, it just makes things taste better and more filling.

    no no sarcasm, I just noticed it’s making a big comeback and I was thinking of trying it as I see it at Trader Joe’s all the time. But I was worried it may have a coconut flavor, which I don’t mind but my husband would, so anyways I think I’m going to go get some today and try it out.

  3. I am going to have to try that margarita. It sounds good. I have been on the Paleo diet for a few weeks and get tired of drinking just water. That just made my grocery list!
